This was our first week of the veggies and they have been awesome so far! I made a delicious pasta salad yesterday with golden beets and toasted pine nuts and parmesan…..yummy! Then tonight I made a vegetable pizza with the arugula, japanese eggplant, peppers, and leftover beets and their greens. It was sooooo good! My company was very impressed with the box of goodies that I had! Keep them coming! Thanks for a great start for our CSA!
